Cauliflower Low Carb Keto Mock Potato Salad Recipe

Delicious and nutritious this cauliflower salad has everything your Keto diet craves. The eggs give this dish a protein boost while Hellmans olive oil mayonnaise adds a good punch of fat with zero carbs. 

One cup of Cauliflower has about 2 grams of fibre, 320mg of potassium (which is about 9% of your daily requirement) while also providing a little over 50% of your daily vitamin C requirement. Cucumber with the skin attached adds in additional fibre which we all know is very important when planning out your daily Keto nutritional needs. Spices and other seasonings are sprinkled in to complete this salad. It is a must try recipe. This summer salad combines a delightfully crispy texture with a tasty burst of flavour.

Ingredients: 

6 cups lightly cooked cauliflower (diced)
1/2 English cucumber (diced) 
8 eggs (boiled then peeled or shredded)
1 cup Hellmann's Mayonnaise 
2 teaspoons mustard 
1/2 teaspoon turmeric 
1/2 teaspoon ginger 
1/4 teaspoon pepper 
1/4 teaspoon salt

Optional Ingredients:

Dill Pickle (diced)
Ham (cubed)
Cheese (cubed)
Celery
Radish 
Fresh dill herb
Bacon Bits (to sprinkle on top)

Directions:

1. Put eggs on to boil. Lightly cook your cauliflower when done it still maintains a crispy texture. Drain your cauliflower and pop it into the fridge to cool. When eggs are hard boiled also pop them into the fridge to cool. 

2. When the eggs and cauliflower are chilled or in about one hour you will be ready to create your salad. In a large salad bowl dice your cauliflower into about 1 inch cubes. Peel, dice, or grate your eggs. 

3. Wash and chop the cucumber and add it into the bowl. If you are adding pickle or substituting it for the cucumber also add it into your salad as well.

4. Now is the time to add in the mustard, mayonnaise, and sprinkle on your choice of spices. Mix it all together and it is ready to dine on.

Like most salad recipes the basics for this one are pretty simple. What makes this salad so unique though is its low carb and calorie count. It tastes much alike a traditional potato salad but is deliciously much lighter. This recipe is ideal for those on the Keto diet plan but also for regular dieters as well. For my family I use this recipe but create 2 unique salads. My family's version is a half and half salad mix of potato and cauliflower while my own version is the carb lighter 100% cauliflower salad.

I prefer to keep my salad quite simple so as to avoid those extra carbs sneaking in. It also insures that should the craving arise I can go back for a second helping later in the day. When using salad dressings keep in mind that not all are created equal. Calories and carbs can vary significantly by brand and type. My personal preference is for Hellman's olive oil Mayonnaise but as a second choice Kraft's olive oil Miracle Whip is pretty diet friendly as well. It's all a matter of limitation.
